This delicious recipe comes from a friend’s mum, and is sure to be a new favorite in your family! Great for breakfast, lunch or dinner – and let’s face it – all our readers with a veggie patch will appreciate a new use for zucchini…
Ingredients:
1 onion chopped and sautéed
1 medium zucchini grated
1 cup self raising gluten free flour
½ cup olive oil
5 eggs lightly beaten
Salt and pepper to taste
Preparations:
Combine flour, oil and beaten eggs, then rest of ingredients. Pour into baking pan or pie dish and bake at 350/180 for 30-40 minutes or until skewer comes out clean.
(Note-if you don’t have self-raising flour add 1 1/2 tsp baking powder and a pinch of salt to the mix)
(Second Note – we’ve been using Besan (chick pea flour) for this dish and it’s really high in protein, no gluten, and no wheat – just reduce the amount of flour that you use to about 3/4 of a cup)
