Grad Karen Gunter passed this recipe on and it’s a delicious almost-sugar-free treat that is high in protein, energy, fibre, and taste.  I have played with the recipe a bit – I use LSA instead of flax, and I add 2 tbsp of hemp seeds as well.  A wonderful treat for home, a potluck, or bring it to a holiday party for a healthier dessert option.

Ingredients:

½ cup oats (steel cut or rolled)

¼ cup almond flour

¼ cup dark chocolate (70%) chips

2 tbsp ground flaxseed

¼ cup shredded coconut

2 tbsp maple syrup

2 tsp vanilla

¼ cup nut butter (almond, peanut, cashew etc)

Preparation:

Combine all dry ingredients and mix.

Add maple syrup and vanilla and mix.

Add nut butter and mix well.

Chill in the fridge for 30 minutes.

Roll chilled dough into 2cm balls.  You can roll them again in coconut or cocoa to pretty it up.

Keep refrigerated or frozen.
