Just about the best use of zucchini I’ve found!  Delish…

Ingredients:

  • 2 cups zucchini, grated
  • 4 cups plain flour
  • ½ cup cocoa
  • 1 ½ cups sugar
  • 1 tsp baking soda
  • ½ tsp salt
  • ½ tsp baking powder
  • 1 tsp cinnamon
  • ½ tsp nutmeg
  • 1 ½ cups oil
  • 3 eggs
  • 1 ½ cups milk
  • 2 tsp vanilla
  • 1 cup dark chocolate chips

Preparation:

  • Heat oven to 350/180
  • Butter two 8×4 inch loaf pans
  • In a large bowl combine all dry ingredients and spices.
  • In another bowl, mix together zucchini, eggs, milk, oil and vanilla.
  • Stir wet ingredients into dry ingredients until just blended.
  • Add chocolate chips.
  • Pour batter into prepared pans and bake about 75 minutes or until a toothpick comes out clean.
  • Cool on rack for 10 minutes, then remove from pans and enjoy.

Note: Freezes well.
