Just about the best use of zucchini I’ve found! Delish…
Ingredients:
- 2 cups zucchini, grated
- 4 cups plain flour
- ½ cup cocoa
- 1 ½ cups sugar
- 1 tsp baking soda
- ½ tsp salt
- ½ tsp baking powder
- 1 tsp cinnamon
- ½ tsp nutmeg
- 1 ½ cups oil
- 3 eggs
- 1 ½ cups milk
- 2 tsp vanilla
- 1 cup dark chocolate chips
Preparation:
- Heat oven to 350/180
- Butter two 8×4 inch loaf pans
- In a large bowl combine all dry ingredients and spices.
- In another bowl, mix together zucchini, eggs, milk, oil and vanilla.
- Stir wet ingredients into dry ingredients until just blended.
- Add chocolate chips.
- Pour batter into prepared pans and bake about 75 minutes or until a toothpick comes out clean.
- Cool on rack for 10 minutes, then remove from pans and enjoy.
Note: Freezes well.
