This crispy, crunchy, colorful coleslaw is a perfect side to your holiday leftovers – and is jam-packed with nutritional goodness. Lasts at least a week in the fridge, and is just perfect to bring along to barbecues, picnics, or potlucks. Not just a boring side-dish, this coleslaw packs a tasty punch!
Vegetable Ingredients:
- ½ red cabbage
- ½ white cabbage
- 2-3 carrots
- 2-3 stalks celery
- Parsley, chives, or other herbs – to taste
Dressing Ingredients:
- ¼ cup wine vinegar
- ¼ cup white vinegar
- ¼ cup olive oil
- 4 tbsp sugar
- 2 tsp salt
- 2 tbsp horseradish cream
- 2 tsp Dijon mustard
- Juice from 1 lemon
- Ground pepper to taste
Preparations:
- Finely dice vegetables – or slice thinly in a mandolin
- Combine all dressing ingredients and whisk well
- Pour dressing over vegetables and toss
- Let sit for 20 minutes, then serve chilled
- Refrigerates well for many days!
