This crispy, crunchy, colorful coleslaw is a perfect side to your holiday leftovers – and is jam-packed with nutritional goodness.  Lasts at least a week in the fridge, and is just perfect to bring along to barbecues, picnics, or potlucks.  Not just a boring side-dish, this coleslaw packs a tasty punch!

Vegetable Ingredients:

  • ½ red cabbage
  • ½ white cabbage
  • 2-3 carrots
  • 2-3 stalks celery
  • Parsley, chives, or other herbs – to taste

Dressing Ingredients:

  • ¼ cup wine vinegar
  • ¼ cup white vinegar
  • ¼ cup olive oil
  • 4 tbsp sugar
  • 2 tsp salt
  • 2 tbsp horseradish cream
  • 2 tsp Dijon mustard
  • Juice from 1 lemon
  • Ground pepper to taste

Preparations:

  1. Finely dice vegetables – or slice thinly in a mandolin
  2. Combine all dressing ingredients and whisk well
  3. Pour dressing over vegetables and toss
  4. Let sit for 20 minutes, then serve chilled
  5. Refrigerates well for many days!
