Corn Fritters and Yogurt Dip

Made this from a recipe in the newspaper this week and with a few creative edits they were amazing! So good, in fact, that this is a stock photo, we ate them too fast to take a pic. I hope you enjoy them as much as we did.

Note: The hero of these fritters is of course fresh Ontario corn

Fritter Ingredients:

  • 3 cups corn, cut off the cob (3-4 cobs)
  • 2 green onions, sliced
  • 3/4cup plain or whole wheat flour
  • 2 tsp maple syrup
  • 1/4 tsp baking soda
  • 1 clove garlic, crushed, or 1/4 tsp garlic powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp chili flakes
  • 2 eggs, lightly beaten
  • Approx. 1/4 cup water
  • Oil for frying

Dip Ingredients:

  • 1 cup yogurt
  • 1 cup chopped fresh herbs (cilantro, dill, parsley)
  • 1/4 tsp ground coriander
  • 1/4 onion, minced
  • 2-3 tbsp lemon juice
  • Salt and pepper to taste

Preparations:

1. In a large bowl, combine corn, green onions, flour, maple syrup, baking soda, garlic, salt, pepper and chili flakes.
2. Add in lightly beaten eggs and mix well, add water as needed to create a batter
3. Heat oil in a large frying pan over medium heat
4. Drop 1/4 cup of the batter into pan to make each fritter. Cook through on each side until browned and cooked through (3-6 minutes)
5. To make the dip, in a bowl blend all ingredients, add salt and pepper to taste.
