A friend just asked for this recipe today so I thought I’d share it with you all.  One of my favorite winter desserts – this blueberry crisp is really easy to make, has lots of nutritious goodness, and it’s delicious to boot!

Ingredients:
3-4 cups frozen blueberries
1 tsp cinnamon
1/3 cup flour (you can use gluten free if you like)
¾ cup brown sugar
1 cup rolled oats
¼ cup organic butter, melted

Preparation:
Put frozen blueberries into a baking dish without thawing.  Toss with a tbsp of the brown sugar and a tbsp of the oats, plus a pinch of cinnamon.  Combine remaining dry ingredients, then add butter and mix with hands until it resembles crumbs and spread over berries.  Bake for 35 minutes at 375.

Serve hot with yogurt, cream, or ice cream.

Note: if using fresh blueberries add 1/6 – 1/4 cup water to the berries.

Note: why not try coconut oil instead of butter?  You might find you can use a little less, and then just add a pinch of salt to the oat mix.
