A delicious way to use kale, the super trendy and super nutritious green, and ideal for the health conscious who crave a crispy, salty snack.

Ingredients:

1 bunch kale

1 tsp olive oil

1 tsp salt

Preparation:

Remove leaves from stems and tear into bit sized pieces.  Wash kale and dry well in a salad spinner.  Drizzle with olive oil and sprinkle with salt, then ‘massage’ into the kale lightly.  Bake on a tray in a 350/180 degree oven until edges just start to brown (approx 10-15 min)

Options: add a bit of parmesan cheese for a big flavour hit – but perhaps reduce the salt to 1/2 tsp or they can be too salty.
