This recipe is one of our retreat favourites, and is loosely based on an Asian recipe called Bim Bam Bap. It is really quick to prepare and full of taste and nutrition. Add or substitute any veggies like broccoli, Swiss chard, zucchini or lettuce for an interesting variation. Go for colour, as each colour has it’s own unique and powerful nutrients, and nourishes body, mind and spirit.
Ingredients
2 cups rice
1 Chinese cabbage, finely chopped
1 bunch green onions, finely chopped
2 carrots grated
2 tomatoes finely chopped
2 eggs scrambled and finely chopped
1 tbsp grated ginger
2 cloves crushed garlic
2 tsp sesame oil
2 tsp rice vinegar
2 tbsp soy sauce
1 tsp brown sugar
Directions:

Cook rice, and immediately after cooking stir in all chopped vegetables. The hot rice will soften vegetables. Mix garlic, ginger, rice vinegar, soy sauce and sesame oil, sugar and toss with vegetable and rice mix and cooked egg and serve. Add soy sauce, salt or pepper to taste. Enjoy!
